Is it possible to take a cruise ship from the U.S. to Puerto Rico one way there...

...and then fly back? We have? never been on a cruise ship and would just like a short tryout. Our thought was to take a ship one way to or from San Juan Puerto Rico. So in general will cruise line book just to their first or second stop?
