I have been in contact with a Chief of Medicine at the U of MN, I have been emailing him with the interest of being employed in his research lab. This is really important to me and I don't want to come off to strong. He told me that he's available to meet with me between xmas and new years. Should I offer a date and time or should I just tell him I'm available?

Be honest. If you are flexible, let him know that you are flexible at this time. Eager is a positive word. I like it. Don't overthink every little thing as he will not likely be reading that much into these social niceties. Keep a calm cool head. Confidence and passion is what you want to portray. Sounds like that is just what you are doing. The rest is out of your hands.

I always say something to the extent of "I'm available on (day 1) at (time 1) and (day 2) from (time frame, like noon to 4PM), but if those times don't work for you let me know and we can arrange something that works for you." End your note with a "Thanks for giving me the opportunity to meet with you" and I don't think you'll seem too overzealous. Good luck!!
You should suggest a few dates and let him choose - but also indicate that you will make yourself readily available at his convenience if the suggested dates don't fit into his schedule. Saying that you are eager to meet with him is not inappropriate at all - it's a bit of a given, and expressing it simply shows that the expected level of interest exists on your part.
