...contact go into a specific category? I know I can do it with personal contacts. I can assign a category to them. But we have a global network, and I can't edit categories of entries in there. Can I set a rule for future messages?

In 2007 you would do this:
Tools/Rules and Alerts
New Rule
Start from a blank rule
Check messages when they arrive
Click the link for 'people or distribution list'
Find the name you want from the Global Address List
Click it and click OK
Click Next
Check the box for Assign it to the 'category' category
Click the link for category
Choose the category or categories you want to use
Click OK
Click Next
Finish, or add exceptions
When you are done, click Run.
