Heyy, I love artichokes to death but since I can't find good ones a lot, I eat the canned hearts a lot, in pasta, with cheese or just on their own, mmmmmmmm, delicious! But I read the nutrition facts on the back of the can yesterday, and there doesn't seem to be anything of nutritional value in them. So my question is, does anyone know of the positives of eating artichokes/canned artichoke hearts, or are they just empty calories? Thank you so much! <3

The the nutritional panel leaves you kind of wondering what you are really eating, because it mentions fat, calories, sodium, fiber, sugar and not too much more.

Fresh are hard to find, they are sometimes pricey, and need some prep work before you can eat them. So this makes canned more appealing.

The nutritional label shows you that artichokes are low in saturated fat, cholesterol and high in dietary fiber. It doesn't show you that they are high vitamin C, vitamin K, folate, magnesium, potassium, copper, manganese, niacin, vitamin B6,iron and phosphorus.

It does point out that they are high in salt from the canning process. You may want to look into frozen artichokes, and check the sodium content. A lot of frozen foods are loaded with salt too.

My Achilles heel is hearts of palm, in the same section.
