...interest on one side of the plane? What would happen if all the passengers piled onto one side of the plane to look out the windows? Would the plane still fly straight? I'm talking about like a 737 or 757, or something like that.

oh yes ,the plane weights 737-900 - Two 117kN (26300lb)
737-900 - Operating empty 42,493kg (93,680lb),
max takeoff 74,840kg (164,000lb)
that means it carrying 32347kg excluding it own weight . but i an talking about the total wieght it can carry including passenger (Typical two class seating for 177).
take the average of a persons weight is 82*177=14,514.compair that with the weight with the aircraft ,thats nothing. even there is a change the pilot will manage it . well a prolonged stay in one side may make a difference in the plane gravity proportion to wings .

Probably very little if any effect. The weight of all the pax wouldn't be far enough away from the center of the fuselage to make an aircraft of that size to list. If it did, the auto pilot would correct slightly with a little aileron and you'd never notice it anyway.
