Jailbroken iOS 5 3GS, tethered. How do I add an something like 'sb settings'

that requires 'reboot'? I've tried just turning off the device once I get to the 'reboot' stage and then using redsnow to boot it up again, but I lose everything and have to do a complete restore. How do I do this?
