Life style changes for a busy mom?

Recently, my doctor said that my cholestrol is borderline high and I need to do something about it. I am willing to do this, of course, but I don't know where to start. I am teaching 5 classes at university level, and taking 3 diploma courses at the university (for a second master degree). The master degree is not very demanding (it's kind of a joke) but it still needs attendance and some proejcts. I have one husband (: ) ) and one toddler ;).
Since the doctor gave me the news, I was thinking about dropping the semester, and focus exclusively on my health for a while, and join the gym. What's weird is that my cholestrol test 1.4 years ago was near optimal, and just within 1.4 it jumped to borderline high (numbers below). I have not gained any weight, but I do not focus on veggies much. I try to avoid bad foods like the plague, but sometimes I am too busy to eat right or exercise (though I am running around all over the place).

Anyways, do you think I should drop the semester (which will sadden me somewhat) or just re-arrange my time to be much more balanced? The problem with me is that if I commit to something I have to be super-dedicated to it, so I am better at doing fewer things at a time, if I am to find any time to cook and exercise. I mean even to cook and exercise, I usually require a long time to prepare to go out, hit the gym, or go to grocery, or cook, because I don't like to do anything hurriedly, the down side though, is that I like to do a lot of things, but obviously I cannot juggle them well, so my health goes to the bottom priority.

Numbers: total Cholestrol 208, HDL 56, Triglycerides 28, LDL (the main problem) 146. (1.4 years ago it was 119, and before that it sometimes was 100).
