Chef Brendan McDermott is slowly but surely teaching New York how to cook through his regular culinary classes at the Institute of Culinary Education and*Brooklyn Kitchen, and he's also passionate about teaching his students how to butcher. In a recent knife skills class at ICE, which I had the pleasure of taking (and firmly believe was the best four hours and $100 I've spent in recent memory), he waxed poetic about the value of good butchers and breaking down your own animals.
