When I lived in TX, my aunt would get homemade tamales from a Mexican lady. They didn't look or taste like that canned red stuff. They had chicken, pork, and beef (not ground) fillings. They were wrapped in corn husk with some sort of past-like(I speculate that Mesa type corn meal). The texture of the paste was like that of cold solid grits, but it had flavor (I speculate a stock was used). The meat was placed in the center. It looks like they were maybe boiled together. It didn't have any exotic or obvious spices either. They were yummy!!! Plz help with a recipe and steps for this; I don't want the paste to separate if it's boiled. What sort of cuts of beef and pork should I purchase? Thanks in Advanced
