Most Mexican restaurants wash their dishes in cold water. Really how clean?

Each country has its own bunch of intestinal parasites. Most dishes even in homes are washed in cold or tepid water. Just how do they get stuff sanitary? A hand polished drinking glass looks clean but who knows you last drank from it or ate from the fork beside the plate.

Educate me and others with your local knowledge.
 
A hand polished glass costs more in labor than using hot water would. I don't agree with your statement but I do want to add that there are more ways to clean the dishes. One is to dip the items in a water solution with bleach. Here the water doesn't need to be hot, the bleach will kill the bacteria. You can often see this at bars where the bartender will dip it in the bleach water and then in plain water to rinse off the bleach. Another method is that it is steam cleaned. z
 
If you are a germaphobe make sure your food is specially served in a plastic plate with plastic utensils. It doesn't matter how clean any restaurant looks what happens in that kitchen stays in the kitchen.
