Muscle Gain Advice? (nutrition and exercises)?

I was probably skinnier than I should have been a year and a half ago, but after eating more and working out, I ended up gaining about 30 lbs. However, for the past 2 months I have kind of stalled at 180 lbs and the amount of weight lifted. If I dont watch my calories (or at least how much i eat) i tend to lose weight. Now I'm caught in a cycle of lose muscle then regain it, but no advances.

My routine: high weight low reps (4-6)
Day 1- Chest, shoulders, triceps
Day 2- Back, Biceps
Day 3- Legs
Day 4- (rest/cardio)
Ive been using this method since i started been rotating the workouts i do each cycle about every 4 weeks or so


Do I need to eat more or change up my workout or something else?
