My pasta recipe calls for brandy. I don't have any, can I substitute for white

cooking wine? OR chicken broth?
It's a parmesean cheese, ham and mushroom sauce.
 
Many recipes call for wine or other forms of alcohol. Here are some suggestions for substitutions. Just bookmark this and keep it on your file.

Amaretto - Non-alcoholic almond extract, Italian soda syrup.
Anisette - See Licorice or Anise Flavored Liqueur.
Apple Brandy - Unsweetened apple juice concentrate, apple juice, apple cider.
Apricot Brandy - Syrup from canned apricots in heavy syrup, melted apricot preserves.
Bourbon - Non-alcoholic vanilla extract.
Brandy - Syrup from canned cherries in heavy syrup, cherry Italian soda syrup, melted cherry preserves.
Calvados - See Apple Brandy.
Champagne - Sparkling apple cider, sparkling cranberry juice, sparkling grape juice.
Cherry liqueur - Syrup from canned cherries in heavy syrup, cherry Italian soda syrup, melted cherry preserves.
Coffee liqueur - Espresso, non-alcoholic coffee extract, coffee syrup.
Cointreau - See Orange Liqueur.
Crème de cacao - Powdered white chocolate mixed with water, non-alcoholic vanilla extract and powdered sugar.
Crème de cassis - Black currant Italian soda syrup, melted black currant jam.
Crème de menthe - Non-alcoholic mint extract, mint Italian soda syrup.
Curacao - See Orange Liqueur.
Gewurztraminer - White grape juice mixed with lemon juice.
Grand Marnier - See Orange Liqueur.
Licorice or Anise Flavored Liqueur - Anise Italian soda syrup.
Mirin - White grape juice mixed with lemon juice.
Muscat - White grape juice mixed with powdered sugar.
Ouzo - See Licorice or Anise Flavored Liqueur.
Orange Liqueur - Orange juice concentrate, orange juice, melted orange marmalade.
Peach Brandy - Syrup from canned peaches in heavy syrup, melted peach preserves.
Peppermint Schnapps - Non-alcoholic peppermint extract.
Port - Grape juice concentrate, Concord grape juice.
Red wine - Grape juice, vegetable stock, cranberry juice, tomato juice, melted grape jelly.
Riesling - White grape juice mixed with powdered sugar.
Rum - Non-alcoholic rum or vanilla extract.
Sambuca - See Licorice or Anise Flavored Liqueur.
Sherry - Apple cider, non-alcoholic vanilla extract, coffee, coffee syrup.
Sparkling Wine - See Champagne.
Triple Sec - See Orange Liqueur.
Vermouth - Apple cider or apple juice mixed with lemon juice.
Vodka - Water, apple cider or white grape juice mixed with lime juice.
White Wine - White grape juice, apple cider, apple juice, vegetable stock, water.
 
You can leave it out.
Don't use cooking wine, it's full of salt.
Don't use cheap wine either.
Use what you like and will serve with the meal.
