Potluck Veg Side Dish Suggestion?

This is for our "Not Back To School" (but home schooling) Party, which consists of a bunch of kids. I have some great ideas that my kids like and that other adults are willing to try (either spicy or just plain full of flavor), but am thinking I need something more mellow, yet intriguing for this non-veg crowd. Any awesome ideas out there?

Oh, it can be ovo-lacto veg up to vegan. I don't care, and no one else will know unless they ask!
 
Spinach salad with sliced pear, roasted sliced almonds, feta cheese crumbled and raspberry dressing.
 
scallop potatoes
broccoli & cheese casserole
corn cakes
stuffed tomatoes
