Question on using an iPhone without a cellular service plan?

Hey there. My father just found out his AT&T plan is due for an upgrade to his phone. He currently has the iPhone 3G (I don't remember if it is 3GS or not, but oh well). He is thinking of upgrading to iPhone 4. Simple enough?

I have an iTouch 2nd generation, and it is fairly out-dated. I wanted to know if I could take the sim card out of my current phone (Samsung Impression) and plug it into my dad's soon-to-be-old iPhone 3. That way I could deactivate my current phone, my iTouch, and just use that iPhone 3. Is there anyway that I can do this?

Another question. If I can actually do this, is there any way I can just not use the cell service on the iPhone and use the Wi-Fi only.

Any help is appreciated.
