King Ranch Chicken Casserole is to die for. You boil and debone a chicken, making sure it's well seasoned. Open 2 cans of mushroom soup. Saute 1 large diced onion, a couple of diced garlic cloves, and 1 jalapeno pepper. Add the soups and some chicken broth to thin it. Add 2 small cans of diced green chilis. Add the chicken and heat thoroughly. In large casserole put a thin layer of sauce, a layer of corn tortillas, sauce, tortillas, and sauce. Bake until bubbly hot and about 10 minutes before taking it out of the oven top it with lots of grated cheddar cheese.
 
Chicken Casserole Recipe

Ingredients:



6 lbs chicken breast meat
1/2 cup celery, sliced
2 package long grain wild rice
1 lb fresh mushrooms, sliced
1 cup sour cream
1 can cream of mushroom soup
1/4 cup butter
1 onion, sliced
1 cup dry sherry
1 cup water
1 1/2 teaspoon salt

Instructions:



1. First of all, in a large pot, add in the chicken, salt, water, onion, celery and sherry. Combine well and let it simmer for 1 hour until tender.



2. Remove from heat then strain the broth and refrigerate chicken and broth immediately.



3. When the chicken has cooled down, cut it into bite-sized pieces.



4. Preheat a skillet then add in the butter. Add in the mushrooms and saute them until tender.



5. Cook the rice by replace the water with the proper amount of chicken broth for firm rice.



6. In a 4 qt. casserole, add in the chicken, rice and mushrooms. Combine and mix well.



7. Add in the sour cream and soup and toss with chicken mixture.



8. Bake for 1 hour at 350°F (177°C).



9. Serve and enjoy!
