Stew Leonard's Vegetable Cake Recipe?

I bought some vegetable cakes at Stew Leonard's and loved them but they said a third party made them and couldn't get the recipe. Does anyone know the recipe? I know they are fried, have corn and corn meal, onions, peppers and probably a few other vegetables in them but need the a recipe to follow.
 
Based on what you've said I'm guessing these are a variation on corn fritters.
I just make corn fritters, I don't have a formal recipe. There are zillions on the web.

If these cakes are fluffy then egg whites are beaten and folded into the basic ingredients.
If the cakes are more chewy (my preference). Whole eggs are added to the basic ingredients.

I use frozen corn, diced onion, diced bell pepper, shredded carrot, and minced garlic.
Equal parts corn meal, and all purpose flour are added to the veggies. Egg and a little milk are used as a binder. I also add 1/2 teaspoon of baking powder. Fry in hot oil until golden brown and cooked through. Yum.


Here's a starter recipe you can work from. It's similar to what I make without the extra veggies. I'd start with 2/3 cup flour and 1/3 cup cornmeal.

Corn fritters #1

CORN FRITTERS
1 cup all purpose flour
1 tsp. salt
1 tbsp. sugar
1/2 cup milk
2 eggs, beaten
2 tsp. baking powder
1 can or 10 oz pkg frozen shoe peg corn

Sift together dry ingredients. Add beaten eggs, milk, and drained corn. Drop by spoonfuls into hot oil and cook until done.
 
Yeevilmo, a lot of places use a third party to prepare some of their dishes. With this one it would be highly unlikely to be listed as a copy cat recipe.
