This could be a life changing decision for our future...?

My boyfriend of 2 years is applying for residencies (he's a med student) all over the Southeast. These residencies last 1-2 years. We are 25 years old now. I have a fantastic job myself that I cannot leave. Do you think he's being selfish by applying to all these numerous locations when he could do one MUCH closer to home so that we can start building on our future?

No more selfish than you are being by wanting him to limit his possibilities to be near you. Yes, you have a great job you can't leave, but residency is important for a med student. There are some excellent hospitals in the southeast, like Emory in Atlanta, and it's rather selfish of you to expect he should not explore any possibilities just to stay close to you.
