Traveling around Europe: What month for these countries?

I live in Europe. We have several years to travel to all the places we want. I prefer everything in the warmer months, but we can't just stop traveling for 8 months. These are the places we want to go. Can you tell me which month or time of year is best?

We are not extremely concerned with "high-season and off-season" - we mainly care about being comfortable in the warmth.

Ireland and Scotland - maybe May to September are better? I traveled there in March and was cold all the time. I'm taking my husband this time, who has a thinner comfort zone!

Greece - we want to do a cruise. This might concern the high season and off-season. Would May be plenty warm for swimming and sunbathing? Is June too late because of all the other tourists and higher prices? I expect July and August are too hot.

Normandy, France - not sure...

Spain - We aren't sure where yet. Much prefer quaint and classic towns to big cities like Barcelona. Palma Mallorca would also be very nice. When to go? Where to go?

Cinque Terre and Elba, Italy - I have been there in September, and it was just a little too cool to swim. It was even cool to walk without a jacket. Is June OK? Is August crazy? We would like to swim.

Prague - Not sure. Have been there in September but don't remember the weather.

Any other suggestions?
