Vegetarian Dishes for the beach!?

my friends and I are going to the beach and need quick but yummy vegetarian dishes. I've recently just went vegetarian and need some recipes that wouldn't be such a pain in the backside to prepare. Everyone else still enjoys meat and I don't won't anyone to be left out because I don't eat meat, so if y'all know of any recipes to share please let me know. Any help will be much appreciated!
CANNOT whatsoever contain mushrooms because of allergy.

Be sure to use Japanese short-grained rice or this recipe will not work. Rather than soy sauce, we brush them with a mixture of white miso and mirin.
 
fried tofu with your choice of sauce, maybe north carolina bbq sauce

tablespoon brown sugar
tbsp chili powder
1/2 tsp cumin
1/2 cup or more ketchup
1/4 cup apple cider vinegar
2 tbsp agave or honey

add all and cook covered in pan over medium heat for 10 minutes
