water bottle or water dish?

I'd say bottle - the dish would need cleaning/refilling every few hours.
The bottle is a lot tidier and easier for both you and the gerbil.

As for baths, use a small tray or bowl.
 
Water bottle, they will like it better. Only use water dishes if they start feeling sick, and they can't get up. Then place like a small cap to something beside her/him.

I have mice and i just put out the dish for 5 minutes each day, because they would knock it over if i left it in all day. The water bottle tends to drip
