I've never prepared tofu myself, but I've had it a few times before and not enjoyed it much. I've decided to give it another try with me as the chef. What are your suggestions? :)

The best advice you will get is to PRESS YOUR TOFU FIRST! Cut it to the desired size you are cooking with and then put in between 2 plates with a few paper towels wrapped around them and put something heavy on top of the top plate so the excess liquid goes out to the towels. Leave it like this for 30-60 minutes before you plan to cook or marinate it. You will find it absorbs more marinade this way too!

One of my favorites to make that my parents who don't like tofu love is tofu marsala. marinate the tofu (cut a block in thirds length wise and then maybe in half) in soy sauce and course brown mustard. Coat the tofu cutlets in flour and fry to near crispy, brown in large skillet. You will use this skillet for the rest of the dish without cleaning. Remove as you would chicken and follow steps to any chicken marsala recipe from somewhere like food network except use veggie broth instead of chicken broth. Serve over mashed potatoes and enjoy!

One note is that I usually add diced yellow or white onion to the mushrooms when browning them. It just adds a nice flavor layer.

well my mom makes it with alot of hot sauce/chili pepper and when its cooking the smell makes me cough alot :D

Marinated Tofu Sandwich
Tofu has the ability to absorb flavor, so marinating it has impressive results. Baking accents this flavor and creates a hearty texture.

1 lb. extra-firm tofu
1 cup barbecue sauce (or sweet and sour sauce/ spicy salsa/ or olive oil with your favorite seasoning)
4 whole wheat sandwich rolls
Sautéed onions, diced bell peppers, etc.

• Drain the tofu and cut it in half horizontally to make two pieces.
• Wrap the tofu in a clean towel, carefully press it between two baking sheets with a small weight on top to remove excess water (don’t crush the tofu), and refrigerate for an hour or more.
• Unwrap the tofu and place in a shallow baking dish. Spoon 1/2 cup of barbecue sauce over the tofu, cover the baking dish and let the tofu marinate in the fridge for at least several hours. The longer the tofu marinates (up to 5 days) the more flavorful it will be.
• Place the marinated tofu on a lightly oiled baking sheet and bake at 400°F for 1 hour.
• Slice the sandwich rolls open, cut the tofu into thin slices, and divide it among the rolls. Mix the sautéed onions, bell peppers, etc., with the remaining barbecue sauce and spoon over the sandwiches.
