So my mom and I came up with this little chore set that I have to do, and one of the things is make dinner once a week. :)

I love cooking and I like trying different things, but my brother is pretty picky and doesn't venture much- pasta, chicken, pasta, beef, pasta, turkey. :P I don't eat much beef so I guess any pasta dishes, chicken dishes, or turkey dishes would be awesome! Any other recipes are good too. I'm up for anything! And preferably stuff that's different and unique!

PASTA SALAD (serves 8)
1 (8 oz.) pkg. pasta of choice
1 (6 1/2 oz.) jar marinated artichoke hearts
1 (14 oz.) can hearts of palm, sliced, drained
1 sm. head broccoli, broken into sm. flowerets
Red bell pepper, coarsely chopped
3 stalks celery, sliced
6 green onions, sliced
3-4 tbsp. capers or as desired

Cook pasta al dente. Add all other ingredients including artichoke hearts marinade. If desired, add a little lemon juice or rice vinegar. Chill and serve. Serves 8.

CHICKEN DISH (serves 3-4)
1 can tomato soup
milk (1 can full from tomato soup can)
1 large green bell pepper (thinly sliced)
1 medium yellow onion (chopped)
2 large boneless skinless chicken breasts (defrosted and thinly sliced)
cooking oil
4 cups shredded cheddar cheese
3 cups spiral egg noodles
1/2 teaspoon salt
1 teaspoon pepper
1 teaspoon cumin
3 teaspoon fajita seasoning mix

In a large skillet, generously add cooking oil, chicken, green bell pepper, and onion over medium-high heat. Cover. Stirring occasionally, fry until chicken is fully cooked, and the onions and peppers are tender. Drain, place back in pan, and set aside.
In a large pot, add water and bring to a boil. Add noodles to the boiling water. Stir occasionally to prevent from sticking to the bottom. While Noodles are boiling, add tomato soup, milk, salt, pepper, cumin, and fajita seasoning mix into a medium pot, cook over medium-high heat until hot stirring often, then lower heat to medium. Be careful not to allow to boil over. Add shredded cheese and stir until fully melted and mixed into soup. Once cooked, remove from heat. When the noodles are done, drain and rinse. Pour the tomato soup mix into the large pot, and add the chicken, onion, and pepper mix into it and stir and heat over medium heat until hot. After that, add the noodles back into the mix and stir well. when done, remove from heat and let sit for about 5 minutes to thicken and cool.

Serve in a bowl and garnish with sour cream.

Makes 3 - 4 servings.

This is one of the many gamer foods I have made when I don't have much in the cupboards. Just pulled everything out onto the counter and stared at it until the idea popped in my head. Hope you guys like it


TURKEY DISH(serves..?)

Place the turkey drumsticks in a crock pot; cook on LOW all day, until meat is done and tender. Do not add any water during cooking, the turkey will create it's own broth. Remove turkeys from crockpot, add enough water to the crockpot to make about 2 cups - no need to be accurate or measure, just guess. Add all of the rice and seasonings to the crockpot, cover and cook on HIGH for 15 to 20 minutes.

While the rice is cooking, debone the turkey drumsticks, and tear into bite-size pieces. Return to the crock pot to reheat, serve.

For the rice mixture, we use equal parts of fast cooking wild rice and fast cooking brown rice. Use chicken or turkey broth-bouillon to make the amounts of liquid needed according to the boxes of rice. The kids love tearing up the turkey - we use both drumsticks and turkey breasts that have been roasting in the oven. Is also a good recipe to use up leftover turkey after Thanksgiving, just add canned broth or bouillon as needed for the rice.
