What are some things to keep in mind when planning an overseas vacation?

I'm planning to go to Scotland in July when I checked ticket prices for January they were considerably less than in July. Should I wait to buy the ticket or is that price because of the time of year? I've also heard that I should buy my plane ticket and hotel room from the same place at the same time.
