What can i subsitute for this recipe?

There are a lot of good meat substitutes out there. I think it is Morning Star Farms makes a meatless Italian sausage that is really very good. You could try that and I think you would like it. I cook a lot of vegetarian meals as my husband is vegetarian.

But, it calls for 100g of Soppressata, and seeing as thats a type of salami, and my family are vegetarian, i cant put that in. What could i substitute for this? I was thinking some zucchini or some sort of vegetable.
 
Tofu is probably your best bet. But if you don't have any, zucchini sounds good.
 
Zucchini, tofu or some other type of protein, or eggplant would be another good one.
 
I think zucchini would be an interesting choice. I'm not sure how this would come out, but perhaps a little bell pepper wouldn't go astray either?
