What happens if i upgrade a jailbroken 3GS (3.1.2) to the official iOS 4.0?

I have this jailbroken iPhone 3GS, and I would like to update it to the official iOS 4.0.
Can i do that in iTunes, and is it possible to downgrade afterwards?
