What is an awesome eggplant dish?

My husband hated the last dish that I made with eggplant and he only will give it one more chance, so please help me find some great recipes!

I hate eggplant. But there is one thing I can stomach and that is baba ganoush.

What was "the last dish" you made him with it? Was it eggplant parmesan? (if it wasn't he might like it because the eggplant is breaded and fried first?)
