what is the best type of olive oil to use for cooking chicken on the stove?

I like to bread my chicken then cook it in olive oil on the stove two minutes on each side before baking it, what is the best type of olive oil to use

If you like the flavor of olive oil, use extra virgin, Otherwise I would use canola or safflower oil. They are mostly flavorless and don't have a low smoke point like olive oil.
