What is the secret to cooking good chicken?

I often have recipes that call for cut up cooked chicken breast. Last night I made a homemade chicken pot pie. Another night, I tried my hand at sweet and sour chicken. I usually cut up the chicken and cook it in a pan with olive oil until it is done. It usually ends up a little tough and kind of "grainy" if that would be the right term. What is the secret to cooking up good chunks of chicken?!
