What shall I cook for my toddler and husband tonight - we have zuccini, kale,...

...cauliflower and sweet potatoes!!? I need to cook for next two days and use thse up - prefer something that is toddler friendly. I.e. stir fry is not his thing.

Any ideas welcome!
