What should I cook for guest from another country?

An older couple that have been like grandparents to me were asked to host a dinner for some church guests from South America. They are not really up to the work, and have asked for my help. I can cook just about anything, but I'm not sure what to fix. I think attempting to compose any S. American dish is a bad idea. I was thinking sharing some good ol southern cooking might be the way to go, as we live in the rural Mt's of NC. Any ideas?

I agree with the 3rd answer, make them some of your favorite foods, give them a taste of the good old south!!! but if you can cook a lot of things, i would make back-up dish, so that in case (for some un-humanly reason lol) they dont like southern food, they will have something from their own country to eat
