What to cook for my assignment?

my brother and his wife are coming to a special family dinner. my family play regular tennis fixtures involving light to moderate activity and i consider my family to be generally healthy. my sister-in-law is 3 months pregnant. i need to prepare and present a meal suitable for this occasion. i must be able to cook this in 70 minutes and it must be 2 course and fairly easy ish i would like to cook a main meal and a dessert preferablly
i also have to be able to walk about 30mins home with it

Chicken breast wrapped in prosciutto with sauteed potatoes and salad followed by cheesecake would be nice. Google a cheesecake recipe and make it the night before and store it in the fridge.
You will need half a whole chicken breast per person.
Two slices of prosciutto ham per person
One tablespoon of tomato paste (tomato concentrate) per person
A bunch of fresh sage
A couple of big bags of pre-washed mixed salad leave.
One and a half medium potatoes per person.

Peel the potatoes and cut into chunks. Put them in a pot and cover with water and bring to the boil.
Simmer for ten minutes or until done. Preheat the oven to 200 celsius. Meanwhile cut any fat, tenderloin or sinew from chicken. Using a knife spread one tablespoon of tomato paste on the top of each fillet. Lay three or four fresh sage leaves along the top of each fillet. Wrap each fillet with the proscuitto ham to enclose the fillet. Spray an oven tray or baking dish with olive oil and place the fillets in the dish. Bake in oven for twenty to twenty-five minutes until chicken cooked through.
Once potatoes are cooked drain. Melt a couple of knobs of butter and a couple of tablespoons of olive oil in the frying pan (skillet). Add the drained potatoes and cook turning until they are golden brown. Put mixed leaves in a big bowl and add vinigrette dressing just before serving.
