What will happen if you run your truck without a thermostat?

I don't think my thermostat s letting water past the water neck to cool the engine because the temp sensor is out on it and my truck i know has to be heating up without water getting past so what will happen if I just take it out will it hurt anything?
Not worried about the heater especially down here in south texas
 
first you need to watch the fluid in the radiator (lid off) to see if the fluid is moving. If you remove the thermostat your engine will not warm up as quickly and your heater core will also not warm up either. The engine will run as usual once the temperature is up to normal.
