I'm making a pumpkin cheesecake and last time the gingersnap cookies I used were too hard and got burnt as it baked. I thought a homemade crust that baked with the cheesecake would turn out better. Thanks for the help!

You can use any cookie in place of graham crackers to make a crust.
For the gingersnap crust just process the gingersnaps and follow the recipe for the crust you usually make. The cookies you use will have more sugar than a graham cracker so cut back on the sugar. Gingersnaps are a bit dark and they have molasses in them so they will brown fast so I would adjust the heat if you are pre baking the crust. If you don't have to pre bake the crust you may want to cover just edge of he cheese cake during the last 15 to 30 minutes if it looks like it is getting dark.

GINGERSNAP CRUST

1/4 c. butter
1 1/4 c. (30) gingersnap cookies, finely crushed

Melt butter, then, blend in with cookie crumbs and press in an 8inch pie plate with a wooden spoon.
Fill with pie mix and bake as directed for pie.

Hope this helps.

ENJOY!!
