I have a project for my biology class which is centered around evolution. I'm having trouble finding anything about nutrition from the past with comparison to current needs.
I was also hoping that I'd be able to find something with L-form carbohydrates, the ones that can't be metabolized by any life since all life is theorized to be from the same ancestral single celled organism.
Maybe about needing different nutrients based off newly formed/functional organs or... something. I'm not entirely sure where to start.

Burkholderia (formerly Pseudomonas) caryophylli can metabolize L-glucose.

The citric acid cycle:

As for the division of chirality, you could have organisms that begin using one for for anabolism and the other form for catabolism. The citric acid cycle enzyme aconitase is an excellent place to start because it acts on citric acid which is achiral, in a stereoselective manner. The carbons that enter as acetyl-CoA are conserved in the first turn of the cycle.

I hope these will get you going.
