Why are some Blue Rays of low quality?

I was viewing over the holidays Blue Rays like THOR, the James Bond series of Moore and Connery and some other comedies and they were fantastic quality. I watched Home Alone and Young Guns and it was worse than dvd quality. I look at the companies of both movies and they come from Morgan Creek and MaplePictures.
Is there a website that can rank movies worth buying in Blue Ray and Movies not?
