Whenever i look a little deeper into the details when downloading so-called high definition torrents, I'll find that the resolution isn't really HD. It'll always be something like 1920x816 or 1920x800. Is there a reason for this?

Because 1920x1080 is a 16:9 resolution, your trying to download a movie with either 1.85:1 or 2.39:1 aspect ratio. The movies are still 1080p but you will see black bars at the top and bottom.

:S Although downloading torrents is illegal, you'll find your problems lies in the fact that HD doesn't always mean FULL HD. When downloading files, you'll want to download movies in 1080p, which is full HD, thus you'll get your desired 1920x1080 resolution.
