Because it's been a relatively recent tradition to turn bible stories into children's songs to teach them the stories.

That being said. I don't know if the flood was exactly about genocide. God got rid of just about everyone...not just a specific race
 
I know, I was also taught it at school, at quite an early age.

They made a big hoo-ha about the dove, the branch and the rainbow being god's sign and all that, but glossed over the fact that the selfsame rainbow making god also just drowned humanity.
