Why did Julia Child take ten years to write a cook book?!!?

As someone who used to research and write research articles and know something about writing speed even when you have no references and are starting from scratch, I just cannot understand why it took ten years to write her cookbook. I do get gourmet food and cooking quite well, and even read some pages of that book online. Plus she had numerous French books to adapt from and wasn't starting from scratch and was professionally trained and not experimenting to take a long time. Shouldn't take more than a year. With three authors, even less. Could anyone explain?
Alex J: No, the movie actually shows she took 10 years to write it. She comments frequently about how much longer it would take to write it. It took 8 years for the first rejected version. 2 more years for revising and publishing with Knopf. Movie was based on her autobiography- so it did take that long. Why?!
No, she taught in her kitchen only when she lived in Paris. Her remaining years in Europe don't think she taught.
Penelope: I accounted for all her known "activities" already including travel and family. School seems to have been only during her Paris years and was informal. No way even if you do fundamental research in science, leave alone French cuisine (where there were lots of cookbooks en francais already), will you take so long. Just doesn't add up.
