well you have to take into consideration that there aren't really any "new" ideas out there. it's all about style and how you deliver it. you have to put yourself into the story...not literally. i mean everyone loved the movie Avatar, but it was basically Dances with Wolves with aliens. if you think something is too similar to another story maybe have someone read what you have and ask their opinion of it then go from there. you might just be overanalyzing. good luck!

I usually realize, "Oh, shit... I'm an idea thief." and delete the whole thing.

I'm not trolling. I really do that.

Swear loudly, then continue. I rarely watch movies, and I haven't been reading as much since I've started writing, but even if I see an idea similar to mine, I keep going, telling myself "great minds think alike". Unless it's identical (which would be a huge coincidence), at which point I would probably make alterations.
