I run a kitchen in a restaurant, and to save making batches of Carbonara sauce i want to make it all to order (as it should be done) but don't anticipate selling many Linguini Carbonara. So as to not waste Pancetta, can i freeze it and cook it from frozen, or will i have to "turbo-defrost" it first?
