My diesel truck was stopping (the engine would shut down) I took it to the mechanic and he said it was the injection pump but I didn't have over $1K to fix it so I brought it home! I was taking another look at it right now and I noticed it has 0 oil, can that be it???? Can my truck be shuting down due to no oil? Should I try putting oil in it?

Many GM cars have a safety feature that will shut down the engine by cutting off the fuel supply to prevent damage being done from running with low oil pressure. Add in enough of the proper oil until you see it on the dip stick and try starting the engine. If you're really lucky it'll fire up without knocking, if it knocks you've burnt out the rod bearings, amongst other things.

the engine was most likely seizing up due to lack of oil. add oil and see if it runs but i reckon u may have done major damage.
