I grabbed a package of baby Yukon Gold potatoes for tomorrow night & I'm looking for a side dish recipe. I'm not in the mood to keep the oven on for 45 minutes to roast them. We live on the 3rd floor of a co-op building that gets the afternoon sun directly in our windows raising the temp about 15 degrees in the late afternoon!

I was going to make mashed potatoes, but I'm tired of using mashed potatoes for a cop out! Any ideas will be welcomed and I'm sure used at one point or another. Thanks for your help!
I'm totally okay with boiling potatoes. I just don't want to keep my oven on to roast them. :)

We love them boiled whole (cut big ones in half) in salt water. Drain after 10 min, then let steam in colander w/ clean dishtowel covering them another 5-10 min. Then toss backin pot w/ butter, S&P, fresh parsley is great, so is garlic.

You can always cook potatoes in the microwave (but you have to watch them carefully). Poke holes in the potatoes for ventilation and microwave on high for three minutes. You can try tossing them in butter, tarragon, rosemary, fresh ground pepper, and salt.

German potato salad for sure!

halve and boil potatoes until fork tender, drain and cool completely
chop 1/2 cup celery, 2 tbsp chopped green onion, 1 tbsp chopped italian (flat leaf) parsley and 2 tbsp chopped cooked bacon (bacon pieces are ok if they are real)
In a separate bowl whisk 1 part red wine vinegar to two parts olive oil with a1/2 tsp of dijon mustard, salt and pepper. Pour this over the potatoes and veggies, toss and let sit in fridge covered for half an hour to an hour. Toss again and WHALLA! You have one of the BEST potato recipes of all time!
