Best Southeast Asia tours or advice?

I am interested in Laos, Vietnam, Cambodia, Indonesia, Thailand, ect. Has anyone went on a tour or just by themselves and had a positive experience. What was the tour name? I would like to embrace the culture and eat and live like them. I don't want to stay at the Hilton and eat McDonald's. What are the must see places? Any advice or knowledge you have is appreciated.
