Can I install a side window and counter to a delivery truck?

I'm looking to add a window with a small counter to a delivery truck. I want to it use as a little food truck to sell sandwiches. Does anyone know how much something like this would cost?

It wouldn't cost all that much, maybe 4 hundred to do a nice job with trim and all. But the big thing is, you have to register your truck as a lunch wagon with the city where you live. You are regulated by them and the department of health. Lots of paper work but there is money in doing that. Just follow the law where this is concerned.
