My own experience -

You can try this way...because Satio already have a application called "Record sound" ( Menu> Entertainment> Record Sound)..

When you want to record a call, open Record Sound, Then hold down the menu key and go out to the main screen, (or press hang up key)..

This just move to the main screen, but the "Record Sound" is still running, so now make your call, Then when you want to record call, just hold down the menu key and select Record Sound, then "record"..

All Symbian s60 phone can switch between one application to another application without exit or close the recent running application...
