I have never tried to brine a turkey before but I would like to try this year. The problem is it will only be 2 of us for dinner and I have a small 11 lb turkey. So far I have only found recipes for standard or larger birds than I have. I know I can probably just use the amount in a normal recipe to cover the bird and discard the rest but I am not sure if the ratio would be screwed up due to the small size. I found one recipe for brine for a turkey breast but it included ingredients I havent used and a couple I dont like. Plus the recipe was for grilled brined turkey breast. I will be simply oven roasting as I dont have a grill..Anyone?
