Fitness while doing night/day shift work.?

How is the best way to not just keep healthy but build myself up while working shift work, underground in a mine?

I've stopped drinking (I'm Irish so that was difficult), have a bit of a routine with core exercises and dumbbells plus I'm trying to eat fruit & vegetables (fruit is nicer). While I do thinking this will keep me healthy I want to build myself up, gain some muscle mass. Any tips or tricks? or general views on keeping healthy while working nights and such?

Also I'm not going to take protein supplements and a gym is out of the question due to my hours.
