Grilled Nachos:

Prep Time: 10 minutes

Cook Time: 10 minutes

Ingredients:

3-4 dozen tortilla chips
2 cups Monterey jack cheese, grated
1/3 cup bacon, fried and crumbled
1 medium red onion, chopped
4 jalapeno chilies, chopped

Preparation:

Preheat grill to a hot temperature. Arrange chips in a flat grilling pan. Cover with other ingredients. Place on grill and turn off the grill. Let cook for about 5-10 minutes or until cheese is melted. Keep a close eye on this one to make sure that the cheese melts without burning.

you got to do it in layers. get a layer of chips and then put a shit load of cheese on them (like a block of cheddar and mozzarella blended together). and do that 3 times so you have 3 layers.

This is a recipe for Italian style nachos. theyre really good and a nice break from the typical cheddar sauce and tortilla chips.

Pasta Chips:
12 wonton wrappers
1 egg white, frothed
2 tablespoons olive oil
1/2 teaspoon oregano or italian seasoning mix

Nachos:
1/2 lb Italian sausage, cooked and crumbled
1 (10 ounce) container refrigerated four cheese pasta sauce or alfredo sauce
1/2 cup chopped tomato
1/4 cup sliced green onion
1 (2 1/4 ounce) can sliced ripe olives
2 tablespoons pickled jalapeno peppers, chopped (more to taste) or banana peppers, chopped
1 cup shredded mozzarella cheese
1/4 teaspoon red pepper flakes

Cut wontons into 4 triangles each and toss lightly in olive oil.
Cover a cookie sheet with a single layer of wontons. Brush with egg white and sprinkle with oregano or Italian seasoning.
Bake at 400ºF for 6 minutes or until lightly browned.
Meanwhile, heat the sauce, brown the Italian sausage and drain fat.
On a platter layer the pasta chips, sausage, and sauce. Top with the tomato, onions, olives and peppers. Finish with shredded cheese and red pepper flakes.
Place in warm oven for 5 minutes to melt cheese and serve.

A bed of tortilla chips rings with sweet potato fries, a hot dog, bacon, red onions, green bell peppers, jalapenos, olives, Anaheim chiles, a burger patty, a weaved bacon blanket, mac n cheese, and then topped off with extra cheese sauce and onion rings with Cheetos to garnish.

Grate cheese of your choice (I like a mix of jack and cheddar). Chop up some scallions and kalamata olives. Put tortilla chips in a roasting pan, sprinkling liberally with cheese (preferably sort of layered-like). Scatter olives and scallions over the chips and bake until cheese is melted and starting to brown. Serve with sour cream and salsa.

If you use a typical store-bought bag of chips, that'll be dinner for 4 to 6, depending on appetites.
