Help with stuffing recipe?

It calls for a 1 pound loaf of bread. The loaf of bread I have is 2 pounds. I'm using a different, more dense kind of bread so do I still use the whole loaf or just stick with half?
I'm using the kind of bread you usually find packaged and sliced. Like wonderbread.
 
Most recipes for stuffing call for a certain number of cups of bread cubes.
I would just use the whole loaf, denser bread is going to weigh more.
You can always add a little warm water or chicken stock if you think it isn't moist enough.
My secret ingredient is to add about a cup of dried instant potato flakes
 
Jellydrink, if your recipe is calling for one pound why use two. just use half the amount of bread and go by the recipe.
