how can i get the background behind apps on my itouch?

i have just updated itunes to the current version, as well as just updated my itouch to 4.2.1 or whatever it is.my itouch is an 8GB 3rd generation. how can i get the background BEHIND my apps? not the background when you first turn it on like where you unlock it. i want to know how to get it behind, without jailbreaking it. thanks!
